A little Thanksgiving History

The last place we were stationed before we moved to the west coast was our home state of West Virginia. For those 4 years that we lived there, I would travel the 3 hours to my grandparents and cook Thanksgiving dinner for my family. Traveling the next day to my husbands parents house where they delayed Thanksgiving dinner a day so that we could share the meal with them.

Our first thanksgiving on the west coast was a little depressing for me as I only had my immediate family to cook for that year. Luckily we had made some good friends that year and ending up sharing the meal with them.

As the years in California passed our Thanksgiving tradition has been to invite all the geo-bachelors and single soldiers my husband works with to our house to celebrate. Every year on this day, our house became a revolving door of people stopping by to share a bite to eat and some good company in place of spending the day alone.

I enjoyed every second of it.

Since moving to Washington, although we still put out the invite, sadly not many people have taken us up on our offer and this year it was just us.

Knowing that we weren’t going to have anyone over this year, I decided that I wanted to stay on track with my nutrition as much as possible. You see I have been following a ketogenic diet for that past 4 months or so and it has helped me take off some of the weight (about 15 pounds so far) and get my energy back. I’m loving it so far.

The problem?

The ketogenic diet is a high fat, moderate protein, low/no carb diet and I LOVE stuffing. I can’t imagine a Thanksgiving dinner without it. I also love pie. Every year my youngest and I make an apple pie. There is also usually an pumpkin pie in there as well. I didn’t want to give those things up just to stay on track.

So I did what anyone would do…. I started looking up keto friendly recipes on Pinterest so I could still enjoy the foods that I love this holiday.


I want to start off by telling you all that the rest of my family have not joined my in the keto lifestyle. So I did end up making two different kinds of stuffing, regular and low carb, as well as a regular apple pie and a low carb pecan pie.

I found my recipe for low carb stuffing on a website called Maria Mind Body Health. You can find it on my PInterest page under Keto Thanksgiving Ideas.

Making the stuffing was sort of an adventure. I’m not much of a baker and the first step in making the keto stuffing is to make low carb garlic bread to be cut up and used in the stuffing.

The first part of the adventure was finding budget friendly unflavored protein powder to use in the recipe. I finally found True Athlete Natural Whey Protein at the Vitamin Shoppe. The bonus…..I also got a free water bottle with my purchase. Score!

So the night before Thanksgiving, I made my first batch ever of low carb garlic bread.

I sliced it, toasted it, and then diced it up and added it to what was actually some very tasty stuffing!

The next low carb recipe I made was pecan pie. I mean you can’t have Thanksgiving without pie. My son and I kept our tradition and made what I was told was a darn good apple pie. Then I preceded to make my first ever pecan pie, low carb or not.

The only thing that I would change about this recipe is that I probably won’t add any sweetener to the crust like the recipe called for. The pie itself was already sweet enough. Also for the size pie I made, I needed more of the filling so I probably would have doubled the recipe.

I must say, for having no sugar in it, that pie was super sweet and definitely satisfied my sweet tooth this Thanksgiving.

Thanksgiving was a success!

Even though we didn’t have any extra people over this year for Thanksgiving, ultimately it was still a success and I enjoyed the time I had to spend with my family. I hope you all had a Happy Thanksgiving as well!

What’s Happening with BarBelles & Book Nerds

So If you haven’t noticed the changes taking place in the blog, you will soon. It’s going to be getting a little makeover. There are several reasons for this and I’ll explain them all as we go along. Get comfortable, this may be a long entry.

 I’m no longer a Beachbody Coach

Most of the changes to the blog are because I’ve had to make some personal changes the past several months. The most recent of which is my decision to stop coaching for Beachbody. I still love their fitness programs and would recommend them to anyone who is looking for an at home fitness program to use, but with my ongoing health issues, I didn’t feel like a very effective coach to anyone. Having said that, after 2 years of trying to overcome the symptoms from a vitamin D deficiency and resulting depression, I have decided to try a more homeopathic approach including changes to my diet and the use of essential oils in place of medications. I’ll talk more about that in future blog posts.

The effect this has on the blog

Since I am no longer coaching I have to remove Beachbody from the blog with the exception reviews and posts about my progress and results. Like I said before, I still love their programs and I still use many of them, I’m just no longer selling them. I am taking this opportunity to broaden my horizons and try new things and I’m inviting you to follow along on my journey to getting healthy again.

I’m running a women’s only online health and fitness accountability group that is Free and open to the public. If you are trying to lose weight, get fit, or just get healthy in general and you need help staying accountable, I’d like to invite you to join us! Changes to BarBelles

You may start to notice changes to the BarBelles section of the blog. As I go along this new journey, I will be writing reviews about the different products and books I use. The product information will be available in the BarBelles Section of the blog.

Artnatuals essential oils

Right now I’m loving my artnaturals essential oils and diffuser. So many people have recommended essential oils to me. However, we are on such a tight budget that I just couldn’t afford them. The artnaturals oils are very affordable. I’ve even tried some of their hair products as well.



Before I go to work on the blog, I always fill my diffuser with a new scent each day. I get to enjoying the changing colors of my diffuser and the scent it gives me while I work.




After talking to some people, I also started doing research on the Ketogenic Diet. Most of my health issues involved low energy, low metabolism, and inflammation issues, all of which the Keto diet are supposed to help with. I will admit that I was skeptical as I usually am but I’m in my 4th week of this diet and so far I’m down over 5 pounds and I feel amazing. To say I feel amazing is to say I feel normal. I didn’t even realize how bad I felt until I started feeling better.

Other Personal Changes

Another HUGE change for me personally is that after about 14 years as a stay-at-home mom, I’m getting ready to go back into the workforce. My resume is written and I told my oldest child that he could “Mom” or nag me this week until I sent it out. You see I can sometimes be the master procrastinator when I’m uncomfortable and I won’t lie to you, going back to work after so long scares the shit out of me, but interviewing for said job scares me even more. I’m terrified. Which is why said child is allowed to nag me this week.

How this affects Book Nerds?

Honestly I don’t know how this is going to affect Book Nerds. It’s my hope that it won’t be affected at all. That I still have to time to read and review books. I’m hoping I have to time to continue writing promos for authors each week. That I will keep putting out my newsletter. I want to continue to help this Indy community that I have grown to love so much. I hope I can continue to grow this blog into the business that I planned it to be when I started. Right now the future hasn’t happened and aside from changes I want to make for the betterment of the blog and the authors it serves, I’m not seeing much structural changes to the Book Nerds side of things.

I have probably forgotten to tell you all sorts of things, but I think this post is long enough. I love you all for sticking with me through all the chaos. Until next time…..
